I love cooking. I truly truly do, and I spend a lot of time in the kitchen. Even my desk and laptop are set up in the kitchen corner, I just love being around pots, spices smells as they inspire me and make me feel cosy. It is not so much lack of time, I can organise my days pretty well, it’s just that I love seeing effects of my labour, fast. And this relates to everything else in my life. These vegan fluffy pancakes are just heaven!

Prep a big jar of vegan pancake mix

So… back to my vegan pancakes- they represent everything that I love about cooking: you can prep a jar of a mix in advance, and store it for months in your larder. Then, whenever you got a craving- just add the plant milk, favourite fruit, and onto the pan. This is such a wonderful way of cooking, I and just being ready. Having this ready mix made in advance will not only make your life easier but also will stop unnecessary trips to the shops. You will always have something to make in the morning!

Even if you think making this vegan fluffy pancake mix in the morning is not a tall order, measuring flours, sugar, then grinding flax seeds, adds another 15 min which you could spend drinking coffee. My advice here is to grind a lot of flax seeds, the best thing to use is a coffee grinder, and keep it in a jar. Then, anytime you need to make a flax egg, or anything else, it is already done! Winner.

Waffles? Yes! Please

And there is a bonus for you…Wait for it…The same vegan fluffy pancake mix makes waffles too, yes you heard it! Just make the batter a bit thicker, and onto the waffle maker. Crispy, filling and so healthy. If you are not a fan of beetroot powder, you can simply skip it or swap for pink pitaya powder, commonly used these days.
