This is one of my favourites soups, it is so filling, nourishing and with a very spoonful you just yearn for more. This vegan soup is so creamy and flavoursome. A one-pot dish that fixes all the problems. Introducing: cauliflower and coconut soup with some extra comfort, dill and rye flour dumplings- because why not. It may seem like there are only a few ingredients and not so many spices and herbs, but this is exactly where the secret of this soup is! Simplicity and freshness, unspoiled flavours of the cauliflower just sharpened by the dill.
No waste cooking with this coconut cauliflower soup
Make sure to get a cauliflower wrapped tightly in plenty of leaves, this way you get an extra layer of flavour and more body in the soup for free, plus, it guarantees fresh and vibrant cauliflower, as leaves act as a protection to precious florets and keep them tight. Cauliflower leaves are just an amazing ingredient, so overlooked and wasted, I urge you to use them in stews, salads, they make wonderful kimchi or you can even lacto ferment them, with plenty of chilli and caraway seeds. In this soup, they will add an extra layer of kinda cabbage-like flavour, some crunch and of course, they will double the yield of the soup! For free!

Feast of flavours
This coconut cauliflower dill soup combines the lightness of simple vegetable soup, creaminess and sweetness from the coconut milk and richness of the dumplings. They soak up all the flavours so well, and you can feel the freshness from the dill. It’s a perfect balance of flavours. I came up with this recipe in Winter when daydreaming about Spring and Sun, and I suddenly remembered soup that my mum used to make when I was very little. It was something like vegetable broth, with whatever fresh or frozen vegetables she could find probably (that’s what it was like growing up in the ’80s in Poland!) and it had some meatballs swimming in, pouched in the broth, and as almost every soup in Poland, it was finished with some cream. So I thought….how do I make it a bit less retro and most importantly, vegan!
