Those tenders will simply blow your mind! They are soft, succulent, melt in your mouth, simply delicious! In my pre-vegan times, I didn’t really love chicken breasts, I found them so bland, dry and flavourless. When I started to develop this recipe, I wasn’t particularly excited, to be honest, but I love the challenge. And, bbq season was fast approaching, I had so many friends asking to come up with something which would be perfect on the charcoal. It took a lot of testing and trials, mostly with seasoning. I was aiming for mild yet distinct flavour, with enough umami, ‘creaminess’, roundness. I found that playing with powdered onion and garlic delivered the best results, but what works really well is shop-bought poultry seasoning or even powdered bouillon. Mild yellow umami, light soy sauce is your top notes here, making this tofu seitan vegan chick’n just perfect.

These are just a few ways you can the same seitan recipe and get creative! I recommend making a lot and freezing some. This way you are always ready to cook a delicious, wholesome, homemade meal.
- Make a vegan Caesar salad and add chick’n fillet on top, fried and warm or cold
- Stuff with some garlic and herb vegan butter, and make a kiev
- Make a loaded sandwich, with vegan mayo, lettuce and tomatoes
- Wonderful in curry, as it soaks up all the flavours
- Perfect coated in BBQ sauce and grilled
- Use in any recipes that ask for a traditional chicken


Eat real food, not E-numbers
Although making your own seitan may seem a little bit daunting, to begin with, trust me, in no time you will be absolutely loving it. You can experiment with various textures, spices and type of mock meat you would like to recreate. There is such a huge variety of vegan non meats available at the moment in the shops, but when I read the labels, I am so put off by all the weird stuff that’s been but there. It is so comforting to know exactly what you are putting in your stomach, and this is my main drive to cook from scratch.
I also love all mock meat creations as they are so inexpensive to make. This tofu seitan vegan chick’n works out less than £5 and will feed a hungry family of 4, plus seconds! Yes, you heard it. So that’s another good reason to start making your own food!
Make your life easier with a good blender
If someone asked me what is my number one kitchen equipment, without any hesitation I’d say FOOD PROCESSOR. And not just any blender, but the good one. Money once spent will soon be the best investment you ever made, as you will be saving so much time and energy. Nothing worse than a bowl that is too small, the engine that overheats every 3 minutes, a bland blade that is not prepared to cut… I love cooking but only in a smart way. I much prefer to spend hours in the kitchen developing flavours and combinations than chopping, kneading, grating…I guess it is all to do with being creative, although, at times, I like to meditate a bit whilst finely cutting vegetables for gyoza filling. But who’s got time for it every day, right?
Mix-knead-fry-poach this tofu seitan vegan chick’n
It is that simple. Really. Wet ingredients in the blender, mix well, until extremely creamy and smooth. Add vital gluten wheat, knead, I use the blender, and shape. Quick fry to seal, cover with vegetable stock, and gently poach till most of the liquid has been absorbed. Now, they have doubled in size, how amazing?! Cool them down, they will toughen up a bit, and that’s it. Ready to eat, or to freeze. They will keep in the fridge for around 5 days.
