This may look so innocent and possibly not that inviting? Well, do not be mistaken. This dish holds so much flavour that your mouth may explode! How much do you love French onion soup? Sweet, rich, thick, traditionally made with beef stock…Paired up with crunchy toast. I made a little variation and topped the sourdough with caramelised balsamic onions. My other favourite is creamy mashed potato…oh my, are you salivating right now?
I had a little play in the kitchen and instead of a soup, I thought: similar flavour profile, but as a stew. So, I decided to prepare black lentils this way. And oh my god, wasn’t it just sensational? Trust me. Flavours of slow-cooked onions, caramelised with coconut sugar, fresh thyme, bay leaf and allspice, combined with creamy lentils deliver just a wonderful dish. And be sure to make a lot, not only it gets better every day, but it is truly addictive.

Life is a stew
This French onion soup stew is so delicious thanks to slow cooking so all the flavours and aromas can develop and bind together. Luckily, you do not have to do anything, just check the pot from time to time to ensure nothing is burning. Just like with all the best things in life, it gets better with time. I like to make it a couple of days before the actual eating day. I leave it in the same pot and gently simmer for around an hour each day, just to make it even better. It is kinda like a relationship, you build something first, combine stories, heritage, past, passions, blend it well and keep the flame going.
Relax with this French Onion Soup
There is no secret to this stew, apart from patience and looking after it. Plus, of course, tasting all over again. You can achieve perfect balance in life, relationships and cooking, by continuously checking in. Facing the challenges, trying to salvage all the disasters, and coming up with unexpected solutions. I like to close my eyes when tasting the food, this way my taste buds are sharpened and I can ‘feel’ food more. It’s almost the same in life…When I find myself unsettled, anxious, I just switch off external stimulation and listen to my gut. After all, it’s the second brain.
