A few weeks ago I went out to my favourite sourdough pizza place. The dough there is so amazing that frankly, I could just eat it on its own smeared with olive oil and some garlic. But, since it was the first post-pandemic pizza night, I went for a full-fat experience and risked vegan mozzarella…Are you familiar with this feeling in the restaurants when before the food arrives, you are already disappointed, as a waitress walks away from the table, you know you have made the biggest mistake of the evening…This was the feeling. The vegan cheese was definitely a failure of the month and ruined my experience. I should have known better, good vegan pizza cheese is so rare, that I simply prefer to avoid it…

How many plant-based kinds of cheese did you try? How much money did you spend on a shop-bought gloop that only caused you tears of disappointment? Not to mention money spent, as this s*** is not cheap! I add to my list numerous cookbooks with apparently the best vegan cheeses recipes- now they serve me perfectly as a tripod prop. Something had to change!

This vegan mozzarella will change your life! It is perfect on pizza, in salads, toasties, and my personal naughty recommendation is tossing it in some panko breadcrumbs and quickly deep frying it (yes, I know, I said it….I said deep fry…shoot me!). It is soft like a pillow, mild, creamy- anything you need from a good mozzarella. And the biggest bonus is that it keeps in a fridge for over a week, so you can make it in bigger batches.
